Orange in baked goodies gives a fresh and good taste. I had almond paste at home, so I put it in the batter as well. Orange and almond goes well together. As often with these kinds of cakes they are tastier the following day, when the flavours get more intense.
Apelsin-Mandelkaka
100 g smör, mjukt
1,5 dl kokossocker
3 msk mandelmassa, riven
2 ägg
0,5 dl grädde
skalet och saften av en apelsin
3 dl vetemjöl
1 tsk bakpulver
mandelextrakt, efter smak
Rör ihop smör, socker. och mandelmassa Tillsätt äggen och
rör om ordentligt. Blanda i grädde, apelsinskal och -saft. Tillsätt sedan mjöl,
bakpulver och mandelextrakt. Blanda. Fyll en smord brödform eller
sockerkaksform med smeten och grädda i 175 C för ca 40 minuter. Dekorera kakan med florsocker blandat med apelsinjuice om du vill.
Orange-Almond Cake
100 g butter, softened
1,5 dl cococnut sugar
3 tbsp almond paste, grated
2 eggs
0,5 dl whip cream
zest and juice of one orange
3 dl flour
1 tsp baking powder
almond extract, after taste
Stir together butter, sugar and almond paste. Add the eggs
and stir well. Mix in the cream, orange zest and -juice. Then add flour, baking
powder, and almond extract. Stir to combine. Fill a greased loaf pan or other
baking pan with the batter and bake at 175 C for 40 minutes. Decorate the cake with some icing sugar mixed with orange juice if you like.
