This is a vegetable bake that is a great side dish with eg fried halloumi cheese, vegetable patties, almond meatballs... You can use different vegetables in the bake and I used, aubergine, zucchini, tomato, and red onion. I chose to spice it easily with salt and black pepper, but you choose spices of your choice.
Vegetable Tomato Bake
1 aubergine, sliced
1 zucchini, sliced
1 red onion
2 tomatoes, sliced
olive oil & coconut oil
salt
black pepper
300-400 g tomato sauce
cheese, grated
Preheat the oven to 200°C. Place the aubergine, zucchini and red onion onto a baking sheet and brush evenly with oil. Sprinkle on salt and pepper. Roast in the oven for 20 minutes. Remove from the oven and let cool slightly. Pour the tomato sauce in an ovenproof dish and put the vegetables and tomatoes in the sauce. Top with grated cheese. Return to the oven and cook for a further 20 minutes until the sauce is hot and the cheese has melted.
Grönsaks-Tomatlåda
1 aubergine, skivad
1 zucchini, skivade
1 rödlök
2 tomater, skivade
olivolja och kokosolja
salt
svartpeppar
300-400 g tomatsås
ost, riven
Värm ugnen till 200 ° C. Placera aubergine, zucchini och rödlök på en plåt och pensla jämnt med olja. Strö på salt och peppar. Rosta grönsakerna i ugnen i 20 minuter. Ta ut ur ugnen och låt svalna något. Häll tomatsåsen i en ugnsfast form och lägg grönsakerna och tomaterna i såsen. Toppa med riven ost. Grädda ytterligare 20 minuter tills såsen är varm och osten har smält.
