Tomato-based sauces are popular at our house. They are easy to make and you get a sauce ready in no time. I like to add coconut milk, because it gives a good flavor and goes well with tomatoes and chickpeas.
Tomato Chickpea Coconut Sauce
4 portions
1 red onion, chopped finely
1 garlic clove, chopped finely
1 grated carrot
1 can diced tomato
2 dl red lentils, cooked
1,5 dl coconut milk
1,5 dl chickpeas
salt
pepper

Fry the onion and garlic in some coconut oil in a pan. Add
the carrot and fry for a minute. Add tomatoes, lentils, coconut milk and
chickpeas, let simmer for 15 minutes. Season to taste. Serve with quinoa, with

Tomat-Kikärts-Kokossås
4 portioner
1 rödlök, finhackad
1 vitlöksklyfta, finhackad
1 riven morot
1 burk tärnad tomat
2 dl röda linser, kokta
1,5 dl kokosmjölk
1,5 dl kikärter
salt
peppar
chil
Fräs lök och vitlök i kokosolja i en kastrull. Tillsätt
morot och fräs i en minut. Tillsätt tomater, linser, kokosmjölk och kikärtor,
låt sjuda i 15 minuter. Krydda efter smak. Servera med quinoa, med tortilla...
